Originally from Normandy, Hervé has been passionate about cooking since childhood. He began his career in his native region, taking part in a number of training courses in Michelin-starred and renowned establishments, honing his techniques as he developed his love of local produce and authentic flavours.
Hervé Gerdelat has a simple cooking philosophy, using fresh, seasonal produce to create delicious and unique dishes. His creativity and ability to marry flavours in unexpected ways are well known, offering a unique culinary experience with every bite. He works with local producers to guarantee responsibly grown ingredients.
