After 50 years of culinary excellence and a shared love of local cuisine, former owner Michel Truchon elegantly bid farewell on January 1.

In keeping with this cherished gastronomic tradition, we are delighted to announce that the keys to our beloved establishment have been handed over to us, Mr. and Mrs. Gerdelat. As a couple of passionate restaurateurs, we were deeply seduced by the beauty and charm of this village. We are committed to preserving the family spirit that has always characterized Le Sénéchal.

Under the direction of our new Chef, Hervé Gerdelat, Le Sénéchal continues its culinary journey. A native of Normandy, Hervé embodies an unwavering passion for cooking, highlighting fresh, seasonal produce in every one of his creations. His talent lies in his ability to marry flavors in unexpected ways, offering guests a unique taste experience.

Hervé's art follows in the footsteps of his predecessor, Michel Truchon, who elevated our cuisine by showcasing the finest Aveyron produce. Under Michel's leadership, Le Sénéchal was renowned for its unique culinary creations, blending tradition and innovation.
