In keeping with this cherished gastronomic tradition, we are delighted to announce that the keys to our beloved establishment have been handed over to us, Mr. and Mrs. Gerdelat. Under the direction of our new Chef, Hervé Gerdelat, Le Sénéchal continues its culinary journey. A native of Normandy, Hervé embodies an unwavering passion for cooking, highlighting fresh, seasonal produce in every one of his creations. His talent lies in his ability to marry flavors in unexpected ways, offering guests a unique taste experience.

Hervé's art follows in the footsteps of his predecessor, Michel Truchon, who elevated our cuisine by showcasing the finest Aveyron produce. Under Michel's leadership, Le Sénéchal was renowned for its unique culinary creations, blending tradition and innovation.
